Ingredients for Bahubali Dosa This recipe is simple. The secret lies in a good “Chicken Chilli Powder” (like a Chicken 65 masala), but a good quality plain chilli powder works great too. For the Dosa:Dosa Batter: 1 cup (your regular idli/dosa batter is perfect) For the Chicken Masala:Boneless Chicken: 200g (cut into very small, bite-sized pieces)Small Onion (Chinna Vengayam): 1/2 cup (finely chopped)Tomato: 1/2 (finely chopped)Oil: 2 tbsp (preferably coconut oil)Ginger-Garlic Paste: 1 tspCurry Leaves: 1 sprigChicken Chilli Powder / Chicken 65 Masala: 2 tsp (This is the secret!)Turmeric Powder: 1/4 tspSalt: To taste How to Make Bahubali Chicken Dosa (Step-by-Step) We’ll make the quick chicken masala first, which takes about 8-10 minutes. The dosa takes 2 minutes.Part 1: The 10-Min Chicken MasalaHeat the Pan: Place a kadai on medium heat and add the oil.Sauté Aromatics: Once the oil is hot, add the chopped small onions and curry leaves. Sauté for 2-3 minutes until the onions turn soft and translucent.Add Pastes & Tomato: Add the ginger-garlic paste and sauté for one minute until the raw smell is gone. Add the chopped tomato and cook until it becomes soft.Add Masalas: Lower the heat. Add the Turmeric Powder, Chicken Chilli Powder, and a little salt. Stir for 30 seconds until the masalas are fragrant.Cook the Chicken: Add the small, boneless chicken pieces. Toss them well to coat in the masala. Add a tiny splash of water (about 2-3 tbsp), cover the pan, and cook for 5-7 minutes. Since the pieces are small, they will cook very quickly.Once the chicken is cooked, turn up the heat and stir until the masala is thick and dry-ish, clinging to the chicken. Your “Bahubali” filling is ready! Part 2: Assembling the DosaHeat your dosa tawa.Pour one ladle of dosa batter and spread it into a thin or thick dosa (your choice!). Keep the heat on medium.Drizzle a little oil or ghee.When the dosa is almost cooked, spoon a generous amount of the Bahubali Chicken Masala onto one half of the dosa.Fold the other half over.
