Imagine sitting in front of a fresh green banana leaf, as servers place dish after dish – crunchy chips, spicy curries, tangy pickles, comforting rice, and finally, sweet Payasam that melts in your mouth. This is Onam Sadya – not just a meal, but a cultural celebration of abundance, gratitude, and togetherness.

The Sadya (meaning “banquet” in Malayalam) is traditionally prepared during Onam, Kerala’s harvest festival that honors King Mahabali. More than 25 dishes are lovingly cooked, each carrying its own flavor, story, and place on the banana leaf.

Let’s dive into every dish, its ingredients, cooking time, story, and placement on the leaf.

Starters – Chips & Pickles

Upperi (Banana Chips)

  • Cooking Time: 20 mins
  • Ingredients: Raw banana, coconut oil, salt.
  • Story: A crispy start to the meal, symbolising prosperity.
  • Placement: Top left corner.

Sharkara Varatti (Jaggery-coated Banana Chips)

  • Cooking Time: 30 mins
  • Ingredients: Raw banana, jaggery syrup, cardamom, dry ginger.
  • Story: Sweetness at the beginning represents abundance for the year ahead.
  • Placement: Beside Upperi.

Inji Curry (Ginger-Tamarind Pickle)

  • Cooking Time: 25 mins
  • Ingredients: Ginger, tamarind, jaggery, green chili.
  • Story: Balances the sweet and savory flavors; digestive aid.
  • Placement: Left side, after chips.

Manga Achar (Mango Pickle) & Naranga Achar (Lemon Pickle)

  • Cooking Time: 15 mins
  • Ingredients: Mango/Lemon, chili powder, mustard, oil.
  • Story: Sharp tang to awaken appetite.
  • Placement: Alongside Inji Curry.
  • Vegetable Curries & Stir-Fries

Vegetable Curries & Stir-Fries

Avial

  • Cooking Time: 40 mins
  • Ingredients: Mixed vegetables (yam, drumstick, carrot, beans), coconut paste, curry leaves, curd.
  • Story: Said to be created by Bhima from Mahabharata during exile, combining all leftover vegetables.
  • Placement: Middle top.

Kalan

  • Cooking Time: 35 mins
  • Ingredients: Yam/plantain, curd, coconut, black pepper.
  • Story: Sour, thick curry symbolizing endurance.
  • Placement: Next to Avial.

Olan

  • Cooking Time: 25 mins
  • Ingredients: Ash gourd, cowpeas, coconut milk.
  • Story: Mild & soothing, balances strong curries.
  • Placement: Center top row.

Erissery

  • Cooking Time: 40 mins
  • Ingredients: Pumpkin, cowpeas, coconut, cumin.
  • Story: Golden color reflects harvest abundance.
  • Placement: Near Olan.

Kootu Curry

  • Cooking Time: 45 mins
  • Ingredients: Yam/plantain, black chickpeas, roasted coconut.
  • Story: A festive delicacy reserved for special occasions.
  • Placement: Alongside Erissery.

Thoran (Cabbage/Beans/Beetroot)

  • Cooking Time: 20 mins
  • Ingredients: Chopped vegetables, grated coconut, curry leaves.
  • Story: Everyday dish made festive with coconut oil.
  • Placement: Top row.

Rice & Main Gravies

Kerala Matta Rice

  • Cooking Time: 40 mins
  • Ingredients: Kerala red rice, water.
  • Story: Base of Sadya – wholesome, filling, earthy.
  • Placement: Center bottom (main area).

Parippu Curry (Dal with Ghee)

  • Cooking Time: 25 mins
  • Ingredients: Moong dal, green chili, ghee.
  • Story: Always the first curry mixed with rice during Sadya.
  • Placement: Poured over rice first.

Sambar

  • Cooking Time: 45 mins
  • Ingredients: Toor dal, tamarind, drumstick, pumpkin, spices.
  • Story: The heart of South Indian cuisine.
  • Placement: Served over rice.

Rasam

  • Cooking Time: 20 mins
  • Ingredients: Tamarind, black pepper, tomato, curry leaves.
  • Story: Tangy soup, aids digestion after heavy Sadya.
  • Placement: After Sambar.

Pulissery (Buttermilk Curry)

  • Cooking Time: 20 mins
  • Ingredients: Buttermilk, turmeric, chili, ash gourd.
  • Story: Cooling effect after spicy dishes.
  • Placement: Last curry to go with rice.

Accompaniments

Papadam

  • Cooking Time: 5 mins
  • Ingredients: Urad dal flour, oil.
  • Story: Crunch factor in the Sadya.
  • Placement: Right side of leaf.

Sambharam (Spiced Buttermilk Drink)

  • Cooking Time: 10 mins
  • Ingredients: Buttermilk, ginger, curry leaves, green chili.
  • Story: Refreshing, cooling drink to end Sadya.
  • Placement: Served at the very end.

Sweet Endings – Payasam

Ada Pradhaman

  • Cooking Time: 1 hr
  • Ingredients: Rice ada, jaggery, coconut milk, cardamom.
  • Story: King of Payasams – rich, festive, and royal.
  • Placement: Served last in bowls, not on leaf.
Onam Special   Palada Pradhaman

Palada Payasam

  • Cooking Time: 1 hr
  • Ingredients: Rice ada, milk, sugar, ghee.
  • Story: Popular in temples, symbol of purity.
  • Placement: Dessert bowl.

Parippu Payasam

  • Cooking Time: 50 mins
  • Ingredients: Moong dal, jaggery, coconut milk.
  • Story: Humble yet divine – staple dessert.
  • Placement: Dessert bowl.

In Sadya, placement is not random:

Top left → Pickles & starters (awakens taste buds).

Top row → Curries & thorans (variety of flavors).

Bottom center → Rice (main base).

Middle servings → Gravies (sambar, rasam, buttermilk).

Right side → Papadam & banana.

Desserts → Served separately in cups at the end.

This systematic order ensures a journey of flavors – from spicy to cooling, crunchy to soft, and finally sweet.
